Triple Berry Flax Bars
Does someone in your family need to eat gluten-free? If so, these yummy bars will become a staple in your house. Packed with protein and fiber, they are the perfect breakfast- on- the -run or mid-day snack when staying power is needed.

- Olive oil spray
- 1/2 cup unsweetened apple juice
- 1 cup ground flax seeds
- 1 cup vanilla whey protein powder such as Fat Flush
- 1 egg plus 2 egg whites beaten together
- 1 tablespoon cinnamon
- 1/8 teaspoon ginger
- Dash nutmeg optional
- 1/2 teaspoon baking soda
- 1/4 cup honey
- 1/2 cup chopped cranberries
- 1/2 cup blueberries
- 1/2 cup raspberries
Preheat the oven to 300 degrees F. Coat a 8-bar pan with olive oil spray.
In a large bowl, mix together the apple juice and ground flax seeds, combining well. Let the mixture stand for 10 to 15 minutes.
Stir in the whey protein, egg and egg whites, spices, baking soda and honey until just combined.
Gently fold in the berries.
Divide the batter evenly among the tins. Bake the bars for approximately 15 to 20 minutes or until a toothpick inserted into the center comes out clean. Be careful not to over-bake.
Let the bars cool for about 5 minutes and remove from the pan.
Make Ahead and Storage Tips: store bars covered in the refrigerator for up to 2 weeks. May also be frozen for up to 4 months.
Berries may be fresh or frozen.These bars may also be made in a 12-cup muffin tin.
