No-Noodle Veggie “Kugel”

Of German origin, a kugel is a sweet or savory baked pudding made with noodles or potatoes and is traditionally served at Jewish holiday meals. The varieties are absolutely endless ranging from vegetable creations to sweet versions using all kinds of fruits and even chocolate! I have created a lighter version for you without the traditional noodles or potatoes. While not a true kugel, this egg and veggie casserole retains all the wonderful flavors and is kinder to your waistline.

Ingredients

  • Olive oil spray
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • Pepper or cayenne to taste
  • 1/2 teaspoon salt
  • 1 pound carrots peeled
  • 3 medium zucchini ends trimmed
  • 3 medium yellow squash ends trimmed
  • 1 tablespoon olive oil
  • 2 medium onions chopped
  • 5 eggs
  • 1/2 pound asparagus tough ends removed, sliced
  • 3 tablespoons butter or olive oil

Instructions

  • Preheat oven to 350 degrees F. Lightly coat a 9 x 13-inch casserole dish with olive oil spray.
  • In a small bowl, combine spices and salt.
  • Using a hand grater or food processor fitted with a grating disk, grate carrots, zucchini and yellow squash. Place vegetables in a clean towel; roll-up tightly. Wring out water until vegetables are dry.
  • Heat olive oil in a large skillet over medium-low setting. Sauté onion for about 10 minutes or until evenly browned and caramelized. Set aside.
  • In a large bowl, lightly beat eggs. Stir in spices, grated vegetables, sautéed onion, asparagus and melted butter or olive oil.
  • Bake, uncovered for 35 to 45 minutes until kugel is “set” and knife inserted into center comes out clean.
  • Cut into squares or scoop out with a spoon.

Notes

Make Ahead and Storage Tips: kugel may be prepared up to 3 days ahead; cover and refrigerate. Reheat at 325 degrees F for about 15 minutes or until hot. Kugel may be frozen for up to 4 months.
Vary your vegetable choices according to season and what’s available locally.
As this kugel is made without the traditional noodles, it will have a softer consistency, similar to a quiche.
