Butternut-Apple Smoothie
Autumn means butternut squashes are popping up everywhere! Have you ever thought of trying butternuts in a smoothie? This smoothie gets its amazing “creaminess” from the butternut squash as well as unsweetened vanilla almond milk.

- 1 small apple cored, cut into chunks and frozen
- 8 ounces unsweetened vanilla almond milk
- 1/2 cup canned butternut squash puree or 1/2 cup cooked
- 1 tablespoon coconut oil optional
- 1/8 teaspoon cinnamon
- Dash ginger and nutmeg
- 1 scoop vanilla whey protein (such as Ice cubes as desired
Blend all ingredients except protein powder and ice for about a minute.
Add protein powder and blend for another minute.
Add ice and blend for another minute or until smoothie is thick and creamy.
This smoothie is equally delicious when swapping frozen apple chunks with frozen pear chunks.
For a completely dairy-free smoothie, make sure to use a vegan protein powder such as the this one. (Vegan protein powders will become creamier with extra blending.)
