1poundcarrotspeeled and shredded (or use shredded packaged carrots)
1/2cupdiced fresh pineappleor canned in natural juice
1/4cupchopped fresh mint
Fresh mint sprigs for garnish
Instructions
In a large bowl, whisk together olive oil, juices and spices.
Mix in shredded carrots, pineapple (optional) and chopped mint, combining well. Garnish with mint sprigs.
Let stand at room temperature for 1 hour to allow flavors to blend.
Notes
