Grilled Pineapple with Orange-Honey Glaze

Ingredients
- 1 large ripe pineapple
- Oil for grilling
Orange-Honey Glaze
- 2 tablespoons honey can also use pure maple syrup
- 1 tablespoon orange juice use fresh-squeezed if available
- Dash cinnamon
Instructions
Preparing Pineapple:
- With a sharp knife, cut off the top of the pineapple.
- Holding pineapple upright, with a serrated knife, carefully slice off the skin. Remove any “eyes” that remain.
- Slice pineapple in half, vertically. Slice each piece again, vertically. (You should now have 4 quarters.)
- Remove core from each quarter. Cut each quarter horizontally into approximately 1 1/2-inch thick slices.
Orange-Honey Glaze:
- In a small bowl, stir together honey, orange juice and cinnamon.
Grilling Pineapple:
- Preheat grill to medium setting; lightly oil to prevent sticking.
- Place pineapple slices on grill; lightly brush with Orange-Honey Glaze.
- Grill pineapple slices for about 4 minutes on each side, or until light grill marks appear. Watch carefully, making sure not to burn.
- Arrange on a serving platter. Drizzle warm pineapple slices with any remaining glaze. Serve immediately.

Make Ahead and Storage Tips: pineapple may be prepared for grilling 1 day ahead. Cover and refrigerate. Glaze may be prepared up to 3 days ahead. Cover and refrigerate. Grilled pineapple is best served immediately.
