On the Menu for Easter and Passover

With the arrival of Spring, comes two beloved holidays, Easter and Passover, each with its own special foods and family traditions. When thinking about this year’s Easter and Passover menus, I have been mindful of the cries of overindulgence I’ve been hearing regarding this winter’s eating. Perhaps the cold is to blame, keeping us inside instead of hitting the gym or burning calories through favorite outdoor activities. For some, a feeling of apathy or even lethargy has persisted, causing healthy eating plans to be relegated to the back burner in favor of too many convenience foods and visits to the fast food lane. Always up to a challenge, I was determined to create dishes for both holidays that were colorful and healthy, while still embracing many of the flavors, colors and traditions we look forward to.

Easter Menu Highlights: “Creamy” Broccoli ‘n Cauliflower Soup, Heirloom Tomatoes ‘n Goat Cheese with Balsamic Drizzle, Orange-Sesame Turkey Tenderloins, Roasted Honey-Dijon Salmon with Fresh Herbs, Golden Beet ‘n Edamame Pilaf and Apricot-Glazed Carrots ‘n Pineapple. Mango-Mango “Fro Yo” and Double Chocolate Fudge Squares provide just enough “sweet” to satisfy.

Passover Menu Highlights: Classic Jewish Chicken Soup, Pan-Roasted Pomegranate Chicken with Caramelized Lemons, Salmon Balsamico, Holiday Tzimmes and No-Noodle Veggie “Kugel”. Sweet endings include Decadent Chocolate “Mousse” and our family’s favorite dessert, Passover Apple Crisp.
