Apple, Cherry and Oat Crumble

Ingredients

  • Olive oil spray

Apple-Cherry Mixture

  • 10 medium Granny Smith apples
  • 1 tablespoon lemon juice
  • 1/2 cup dried tart cherries look for Eden’s apple juice-sweetened
  • 1/3 cup date sugar see MPM Mini-Bites
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ginger

Topping

  • 3/4 cup rolled oats
  • 3 tablespoons date sugar
  • 1/4 cup sliced almonds
  • 3 tablespoons butter melted
  • 1/8 teaspoon salt
  • 2 tablespoons butter cut into bits

Instructions

  • Preheat oven to 350 degrees F. Coat an 8 x 12-inch baking dish with olive oil spray.
  • Apple-Cherry Mixture: peel, core, and cut the apples into 1/4-inch slices; place in a large bowl. Toss apples with lemon juice. Add cherries, date sugar, cinnamon and ginger; toss gently with a fork. Spoon apple mixture into baking dish; set aside.
  • Topping: In a small bowl, combine the oats, date sugar, almonds, melted butter and salt with a fork until crumbly. Sprinkle over top of the apple mixture.
  • Dot with butter. Bake for about 50 minutes or until lightly browned and bubbly.

Notes

Make Ahead and Storage Tips: this dish can be made up to 3 days ahead. Cover and refrigerate. Reheat covered at 300 degrees F for about 15 minutes or until warmed through. Can also be month frozen for up to 4 months. Defrost at room temperature about 4 hours and reheat.
Delicious served with a dollop of freshly whipped cream.
Date sugar is an unprocessed sugar made from dehydrated ground dates. Note that depending how finely ground, all the date bits may not completely dissolve into the apple mixture. When using date sugar in a recipe, you may substitute for an equal amount of granulated or brown sugar. Brands to look for are Bob’s Red Mill or Now Foods.
