Crazy for Greens
You don’t need me to tell you how healthy greens are for you. But before you turn up your nose at the thought of even trying a bite, try my quick ‘n healthy sauté. If you’re a greens newbie, look for any variety of packaged baby green combos that are now readily available in most supermarkets and specialty store such as Whole Foods and Trader Joe’s which do all the preparation for you.

Ingredients
- 2 teaspoons olive oil
- 2 cloves garlic chopped
- 1 pint cherry or grape tomatoes, halved
- 1 5 ounce package of baby greens (such as spinach, kale or a mixture available from Organic Girl, Earthbound Farms or Trader Joe’s)
- 2 teaspoons balsamic vinegar
- Coarse salt and pepper to taste
- 2 tablespoons pine nuts toasted if desired
Instructions
- As sautéing is a quick-cooking method, it is best if you have all ingredients prepped and assembled before beginning.
- In a large pan or wok, heat olive oil over medium heat until hot. Add garlic; sauté for 1 minute or just until softened and lightly browned. (Do not allow to burn. You just want the flavor of the garlic to be infused into the oil.)
- Add tomatoes; sauté for 1 minute or until softened and starting to wrinkle.
- Add greens, vinegar, salt, pepper and pine nuts. Continue sautéing for 1 minute or just until greens are wilted.

Entice picky palettes by offering lots of different varieties of greens. Instead of using a packaged mixture, how about trying a bunch of rainbow chard, spinach or kale? This veggie sauté would be wonderful served over brown, jasmine or basmati rice as well as quinoa and couscous.
