Maple-Infused Acorn and Delicata Squash Rings

Little ones who normally turn up their noses when you serve squash, will be delightfully surprised when you serve them these adorable squash rings!

Ingredients

  • Olive oil spray
  • 3 medium acorn squash
  • 3 medium delicata squash
  • Cinnamon
  • Pure maple syrup

Instructions

  • Preheat oven to 425 degrees F. Lightly coat a large roasting pan with olive oil spray. (You may need 2 pans, depending on how much squash you have.)
  • With a knife, prick squashes all over. Place squashes on pan; roast for about 20 minutes or until soft enough to slice. Slice squash into 1/2- inch rings; remove the seeds. (Save seeds for roasting, if desired.)
  • Arrange squash rings on pan; prick all over with a fork. Sprinkle rings with cinnamon. Drizzle rings with maple syrup. Roast for about 20 minutes or until squash is very tender.

Notes

Make Ahead and Storage Tips: squash rings may be made up to 3 days ahead. Cover and refrigerate. Reheat at 325 degrees F for about 15 minutes or until hot.
Feel free to use whatever winter squashes are available in your area. Other favorites of are dumpling, hubbard and butternut.
