Name: NY-Style Cheesecake Topped with Dark Chocolate Ganache
Ingredients: 9- inch springform pan; Parchment paper; Butter for greasing pan bottom; Foil; Roasting pan; Boiling water; 2 cups graham cracker crumbs ((about 2 sleeves of graham crackers)); 1 ½ tablespoons sugar; 5 tablespoons unsalted butter (melted); Pinch salt; 32 ounces cream cheese (room temperature, cut into chunks); 1 1/3 cups sugar; 2 teaspoons pure vanilla extract; Pinch salt; 2/3 cup heavy whipping cream; 2/3 cup sour cream; 4 large eggs; 1 4 ounce bar semisweet chocolate (see MPM Mini-Bites); 1 4 ounce bar bittersweet chocolate (see MPM Mini-Bites); 1 cup heavy whipping cream; 1 4 ounce bar white baking chocolate
