Pomegranate Vinaigrette

Pomegranate Vinaigrette

This light and fruity vinaigrette has just the right flavor balance of sweet vs. tart. Delicious over a simple salad of mixed greens or paired with a main course salad topped with grilled chicken or salmon.

Ingredients

  • 1/3 cup 100% pomegranate juice like Pom
  • Juice of 1/2 lime
  • 2 tablespoons brown rice vinegar or apple cider vinegar
  • 2 teaspoons honey optional
  • 1 teaspoon chopped fresh thyme optional
  • 1/3 cup almond oil or extra-virgin olive oil

Instructions

  • In a small bowl, whisk together all ingredients except oil.
  • Slowly add oil, whisking constantly until well combined.
  • Cover and refrigerate until serving time.

Notes

Make Ahead and Storage Tips: store covered in the refrigerator for up to 3 days. Whisk before serving.
