Pomegranate Vinaigrette
This light and fruity vinaigrette has just the right flavor balance of sweet vs. tart. Delicious over a simple salad of mixed greens or paired with a main course salad topped with grilled chicken or salmon.

Ingredients
- 1/3 cup 100% pomegranate juice like Pom
- Juice of 1/2 lime
- 2 tablespoons brown rice vinegar or apple cider vinegar
- 2 teaspoons honey optional
- 1 teaspoon chopped fresh thyme optional
- 1/3 cup almond oil or extra-virgin olive oil
Instructions
- In a small bowl, whisk together all ingredients except oil.
- Slowly add oil, whisking constantly until well combined.
- Cover and refrigerate until serving time.
