Mixed Berry Coulis

Of French origin, a fruit coulis is really nothing more than a fancy term for a sauce made from pureed and strained fruit. Simple to make, colorful and so very healthy, a fruit coulis is delicious drizzled over all kinds of fruit, pancakes, waffles and French toast. It would also pair beautifully as a light and tasty topping for grilled fish and chicken.

Ingredients

  • 2 cups fresh or frozen mixed berries blackberries, raspberries, strawberries, etc.
  • 2 tablespoons fresh orange juice
  • 2 teaspoons fresh lemon juice
  • Up to 1 tablespoon honey optional

Instructions

  • In a blender or mini food processor, puree all ingredients until smooth.
  • Place a hand strainer over a medium bowl. Pour fruit mixture into strainer, pressing with the back of a spoon to remove the seeds.
  • Pour coulis into a small bowl. Cover and refrigerate.

Notes

Make Ahead and Storage Tips: coulis may be made up to 3 days ahead. Cover and refrigerate. Whisk again before serving. May also be frozen for up to 6 months.
Have fun with your berries! Change up your coulis using any combination of berries you like.
Can frozen fruit be used if fresh is not in season? Absolutely! Just allow to slightly defrost before pureeing.
A fruit coulis is so versatile! Try drizzling over your favorite pancakes, waffles and French toast as a healthier alternative to butter and syrup. Or add a few tablespoons to your morning smoothie for an extra dose of vitamins and antioxidants. A fruit coulis also would look lovely drizzled over grilled chicken or fish.
