Fruit Array with Goat Cheese Medallions ‘n Berry Coulis

This beautiful dish is a perfect example of when “less is more.” The freshest of fruits play “dress-up” with ultra-creamy and decadent goat cheese “buttons” enrobed in a thin layer of toasted nuts. Arranged on a lovely bed of greens and served with a coulis made from an assortment of fresh berries. Simple, festive and healthy!...

Ingredients

  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 1 cup cherries
  • 8 large strawberries with leaves left on if desired
  • 2 ripe peaches or nectarines cut into wedges

Instructions

  • Place fruit on a large decorative platter.
  • Tuck in goat cheese medallions among fruit.
  • Serve with Mixed Berry Coulis on the side or drizzle over fruit before serving.

Notes

Make Ahead and Storage Tips: fruit is best arranged on platter same day as serving. Roll goat cheese in chopped pistachios no more than 1 day ahead as the nuts will become soggy. Coulis may be made up to 3 days ahead.
Any fruit goes! Feel free to choose fruits depending on preference as well as seasonal availability.
