Finally, temperatures are dropping a bit here in SW Florida and the snow birds are slowly migrating south, further signs that fall has indeed arrived. However, in many areas, days are already much cooler and nights are becoming quite brisk. With school and social calendars “ramping up” fast, I have created some new fun and healthy make-ahead dishes suited for chillier temperatures.
Hearing your “shouts” recently on MPM’s Facebook page for easy-to-assemble crockpot recipes, I have several new warming dishes for you to try including Chicken Fajita Soup and Turkey Sausage ‘n Peppers Marinara. Simple and hearty Two Bean Chili will be a family favorite. Pop these simple ingredients into your crockpot and a super-yummy “meal-in-one” will be ready for dinner when you are! Just add salad, fruit, a no-fuss “side” and you’re done. Both are also perfect for tailgating parties and potlucks or for mid-week dinners with lots of yummy leftovers.
Love casseroles? Make Moroccan Stuffed Peppers ahead to serve during the week with quickie veggie “sides” such as Pan-Roasted Green Beans with Caramelized Onions. Struggling with salad boredom lately? Colorful and crunchy Sweet Autumn Salad with Creamy Pear Vinaigrette comes together in minutes and promises to hook the most stubborn veggie eaters.
