Baked Sweet Potato “Fries”

If your kids are always begging for fries, why not offer them a healthier baked version made with sweet potatoes?

Ingredients

  • 4 medium sweet potatoes peeled (organic if possible as they are usually much sweeter)
  • Olive oil spray
  • About 4 teaspoon olive oil
  • Spices of choice such as dried cumin Italian seasoning, garlic and onion powder, paprika, etc.
  • Coarse salt and pepper to taste

Instructions

  • Preheat oven to 450 degrees F. Lightly coat 2 baking sheets with olive oil spray. Cut each potato in half length-wise. Cut each piece lengthwise into thirds.
  • Arrange potatoes on baking sheets. Toss each pan of potatoes with about 2 teaspoons olive oil, spices of choice and salt and pepper. Bake for about 20 minutes or until potatoes are tender and lightly browned, turning with a spatula half-way through. (Due to the natural sugar content in sweet potatoes, as well as being baked, they will have a softer-like consistency as opposed to crispy when fried.)

Notes

Make Ahead and Storage Tips: sweet potatoes may be prepared for roasting up to 1 day ahead. Cover and refrigerate. Leftovers may be stored in the refrigerator for 2 days. Lightly coat a baking sheet with olive oil spray. Reheat at 300 degrees F uncovered for about 7 minutes or until hot. Freezing is not recommended.
These sweet potato "fries” would be make a yummy kids’ dinner served with my Crispy Baked Chicken Nuggets!
