Decadent Chocolate “Mousse”

I practically can guarantee your guests will never know this amazing “mousse” is made from tofu and Greek yogurt! This showstopper dessert will make a fabulous ending to any company or holiday meal. And…. what a perfect way to indulge in chocolate without blowing your healthy eating plan! *Note: if not feeding a crowd, feel free to halve the recipe

Ingredients

  • 24 ounces silken tofu like White Wave or Nori-Mu
  • 2 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips melted
  • 1 cup plain Greek-style yogurt like Fage

Garnish (optional)

  • 1/2 pint 8 ounces heavy cream
  • 1 ounce dark chocolate grated

Or

  • Small fresh berries such as blueberries raspberries and blackberries
  • Fresh mint sprigs
  • 1 ounce dark chocolate grated

Instructions

  • Drain tofu in a sieve or colander for 20 minutes. (or up to 24 hours) Discard liquid.
  • In a blender or food processor, blend together tofu and vanilla extract for 1 minute or until smooth.
  • Add melted chocolate and blend for 2 minutes. Scrape down the sides and blend 1 minute longer.
  • Add yogurt and blend just until incorporated, about 10 seconds.
  • Spoon “mousse” into 8 to 10 mini decorative serving bowls. Cover bowls; refrigerate for at least 2 hours to allow “mousse” to set.
  • Optional Garnishes:in a chilled medium bowl, whip cream using a portable or stand mixer for 3 to 5 minutes or until stiff peaks are just about to form. Be careful not to over-whip or cream will become thick and lumpy. Top each serving with a dollop of whipped cream; sprinkle each with grated chocolate. Or, arrange fresh berries and mint sprigs on top of each bowl. Sprinkle each with grated chocolate.

Notes

Make Ahead and Serving Tips: chill mousse (covered) for at least 2 hours to allow mixture to set. Enjoy within 3 days.
If you haven’t used silken tofu before, you are in for a creamy treat! Silken tofu is available in refrigerated or in shelf-stable packages in natural and organic stores as well as many supermarkets.

    This sounds really interesting (yet delicious!!) I would have never thought to do a mousse like this. I agree with you on the mini-bite: homemade cream is the best!<br /><br />I never did either Nicole. But silken tofu really does add a lovely creamy texture to whipped desserts. You cannot even tell you aren't using cream. :) ~Linda
