Moroccan Carrot Salad

Ingredients
- 1/3 cup olive oil
- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 1/4 teaspoon ground ginger
- 1 teaspoon cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon coriander
- 1/4 teaspoon salt or to taste
- Cayenne pepper to taste
- 1 pound carrots peeled and shredded (or use shredded packaged carrots)
- 1/2 cup diced fresh pineapple or canned in natural juice
- 1/4 cup chopped fresh mint
- Fresh mint sprigs for garnish
Instructions
- In a large bowl, whisk together olive oil, juices and spices.
- Mix in shredded carrots, pineapple (optional) and chopped mint, combining well. Garnish with mint sprigs.
- Let stand at room temperature for 1 hour to allow flavors to blend.
Notes
Make ahead and Storage Tips: salad can be made 1 day ahead and stored in the refrigerator. Remove from refrigerator about 30 minutes before serving.
