Crazy for Summer Salads!

For this edition, I am sharing with you one of last summer’s most popular posts (with some yummy new additions) so that I can take a much needed blogging break. Enjoy!

While those of you who endure frigid winters are craving garden-fresh produce, “we Floridians” are in our glory as these veggie gems are plentiful. So although I created most of these salads smack in the middle of winter, I waited until summer’s end to share them with you. My entire Salad Collection can be found HERE.

 
Consider these salads as a blueprint, taking advantage of your local farmers’ market and home garden late summer goodness. I challenge you to tempt your taste buds with greens you’ve never tried before. How about dandelion, baby kale, watercress or arugula? Toward the end of summer is the perfect time to enjoy the myriad variations of heirloom tomatoes and beautiful squashes such as pattypans. And if you are lucky enough to have access to fresh summery herbs such as basil, dill, oregano, mint, thyme and rosemary, they will surely enhance the flavor of all of your salads. Several of these salads are satisfying enough on their own to enjoy for lunch or as a light evening meal. Others can become a complete meal by pairing with proteins such as grilled chicken, shrimp, salmon or steak. Like to “go vegetarian?” Try adding your favorite beans such as garbanzos, edamame or kidney.

So before you wave bye-bye to farmers’ markets and jewels from your garden, think about enjoying some of my cool and refreshing salads. Light, flavorful and kind to your waistline, especially if you have a bit of “summer foodie indulgence” you’d like to melt away before autumn rolls in.

    I LOVE summer salads. I could really go for that shrimp cobb salad right about now!
  3. I love salads during summer! They are filling but at the same time do not put a burden in your stomach especially here in Greece where temps are quite high during summer! Your collection is delicious Linda I wouldn't know which one to choose. Probably would plan to eat one per day!
