Crazy for Late Summer Salads!

While those of you who endure frigid winters are craving garden-fresh produce, “we Floridians” are in our glory as these veggie gems are plentiful. So although I created most of these salads smack in the middle of winter, I waited until summer’s end to share them with you.

Consider these salads as a blueprint, taking advantage of your local farmers’ market and home garden late summer goodness. Tempt your taste buds with greens you’ve never tried before. How about dandelion, baby kale, watercress or arugula? Summer’s end is the perfect time to enjoy the myriad variations of heirloom tomatoes and beautiful squashes such as pattypans. And if you are lucky enough to have access to fresh summery herbs such as basil, dill, oregano, mint, thyme and rosemary, they will enhance the flavor of all of these salads.

Main course favorites such as Mediterranean Shrimp ‘n Couscous Salad, Herb-Crusted Salmon Salad, Greek Isles Grilled Chicken Salad and Mango Shrimp Salad would make a delicious and satisfying lunch or a light evening meal.

Side salads such as, Grilled Asparagus, Peppers ‘n Tomato Salad, Layered Picnic Salad, Heirloom Tomatoes ‘n Goat Cheese with Balsamic Drizzle, Farmers’ Market Salad and Grilled Vegetable ‘n Couscous Salad can become a complete meal by accompanying with proteins such as grilled chicken, shrimp, salmon or steak. Like to “go vegetarian?” Try adding your favorite beans such as garbanzos, edamame or kidney.
