Fruit Array with Goat Cheese Medallions ‘n Berry Coulis

This beautiful dish is a perfect example of when “less is more.” The freshest of fruits play “dress-up” with ultra-creamy and decadent goat cheese “buttons” enrobed in a thin layer of toasted pistachios. Served with a pretty berry coulis made from an assortment of fresh berries. Simple, festive and healthy!

 
Did you ever wonder how to make those decadent-tasting goat cheese medallions served atop fancy restaurant salads? These yummy “buttons” are so simple to make, I’m almost embarrassed to call them a recipe!

 
Of French origin, a fruit coulis is really nothing more than a fancy term for a sauce made from pureed and strained fruit. (This version features berries.)

 
Easy to make, colorful and so very healthy, a fruit coulis is delicious drizzled over all kinds of fruit, pancakes, waffles and French toast. It would also be wonderful served as a light and tasty topping for grilled fish and chicken.

 

Fruit Array with Goat Cheese Medallions ‘n Berry Coulis

Yield: about 4 servings

Make the Pistachio-Encrusted Goat Cheese Medallions
 
With a nut chopper or sharp knife, chop nuts finely.

 

With a sharp knife, slice goat cheese into about 8 circles. (Goat cheese will crumble slightly which is fine.) Roll each slice into a ball.

 

Using a drinking glass, flatten each ball into a disk (about 1/4-inch thick ). (If they stick to the glass, gently peel off with a knife.)

 
Roll rims of each disk in chopped pistachios until coated evenly.

 

Use immediately or wrap each in wax paper or plastic wrap and refrigerate up to 1 day.

 

Make the Mixed Berry Coulis
 
In a blender or mini food processor, puree all ingredients until smooth.

 

Place a hand strainer over a medium bowl. Pour fruit mixture into strainer, pressing with the back of a spoon or spatula to remove the seeds.

 

Use immediately or cover and refrigerate up to 3 days.

Choose a variety of beautiful seasonal fruits and arrange on a large decorative platter.

 
Tuck in goat cheese medallions among fruit. Serve with Mixed Berry Coulis on the side or drizzle over fruit before serving.

Ingredients

  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 1 cup cherries
  • 8 large strawberries with leaves left on if desired
  • 2 ripe peaches or nectarines cut into wedges

Instructions

  • Place fruit on a large decorative platter.
  • Tuck in goat cheese medallions among fruit.
  • Serve with Mixed Berry Coulis on the side or drizzle over fruit before serving.

 

Notes

Make Ahead and Storage Tips: fruit is best arranged on the platter the same day as serving. Roll goat cheese in chopped pistachios no more than 1 day ahead as the nuts will become soggy. Coulis may be made up to 3 days ahead. Cover and refrigerate. Whisk again before serving. May also be frozen for up to 6 months.

Any fruit goes! Feel free to choose fruits for your lovely platter depending on preference as well as seasonal availability. In the summer months, choose fruits such as pineapple, all kinds of melons, kiwi, papaya and mango. During colder months, heartier fruits such as apples, pears and even dried fruits would be wonderful choices.
